A Satisfying Vegetarian Sandwich

Here’s a great tasting sandwich when you’re on the go. It’s from one of my favorite cookbooks, The Engine2 Diet, by Rip Esselstyn. The almost meaty-tasting spread that anchors it is a black bean spread that is made from a can of black beans, garlic, cumin, sea salt, milk substitute and lime juice that is processed together just long enough in a blender to make a coarse spread. You can add extra heat to the spread by also adding chili powder, chopped jalapeño and a small red onion (yes, I like to add those).

After thickly applying the black bean spread to 2 slices of toasted whole grain bread, lay on sliced cucumber, tomato slices, arugula or cilantro, alfalfa sprouts, Mrs. Dash lemon pepper and lemon or lime juice.

The combination is delicious and filling. Enjoy!
