Pasta Cu Pisidi (with Peas)

Ingredients

  • 2 tbsp chopped fresh basil
  • 1 chopped leek
  • 2 cloves of chopped garlic
  • 2 tbsp. Olive oil
  • 8 plum tomatoes (peeled) ( I prefer fresh)
  • 2 cans of 8 oz. tomato sauce (no added salt)
  • 1 cup of frozen peas
  • 1 lb. penne pasta

GARNISH:

  • Grated Romano cheese
  • Hot pepper flakes

 

Method

Saute leek and garlic in oil, add plum tomatoes and mash with a manual masher.
Add 2 cans of tomato sauce and the basil. Bring to a boil, add the peas and simmer 20 minutes.
Boil the pasta, drain, combine the sauce and pasta in a bowl. Serve with grated Romano cheese and hot pepper flakes
