Ingredients
- 2 tbsp chopped fresh basil
- 1 chopped leek
- 2 cloves of chopped garlic
- 2 tbsp. Olive oil
- 8 plum tomatoes (peeled) ( I prefer fresh)
- 2 cans of 8 oz. tomato sauce (no added salt)
- 1 cup of frozen peas
- 1 lb. penne pasta
GARNISH:
- Grated Romano cheese
- Hot pepper flakes
Method
Saute leek and garlic in oil, add plum tomatoes and mash with a manual masher.
Add 2 cans of tomato sauce and the basil. Bring to a boil, add the peas and simmer 20 minutes.
Boil the pasta, drain, combine the sauce and pasta in a bowl. Serve with grated Romano cheese and hot pepper flakes
