Ingredients
- 1 can Pensabene Milanese (only available at Italian import store)
- 1 flat can anchovies, reserving 1 anchovy fillet to add to bread crumbs
- 2 garlic cloves, minced
- 1/2 of small onion, chopped fine
- 2 8oz cans of Hunt’s tomato sauce (no added salt)
- 1 lb. buccatini pasta
- 1 cup seasoned bread crumbs
- Vegetable oil for frying
Method
Saute onions and garlic with anchovies and oil (reserve one fillet for the topping) in sauce pan and add 2 cans of tomato sauce. Add can of Pensabene Milanese and let simmer 20 minutes, then turn off the heat.
Cook pasta till al dente, drain and add to the sauce mixture in a bowl.
In a fry pan take the 1 anchovy fillet, add 1 tbsp. of olive oil, mash the fillet with a fork, and add one cup of bread crumbs ( I prefer seasoned). Stir constantly, cooking over low heat, until it is toasted to your liking. Serve this mixture over the pasta instead of cheese.
